A bottle host is in charge of V.I.P. customers whom order bottle service. The customers buy a bottle of aliqour instead of one drink, then the bottle with glasses and mixers of choice are brought to the table by the hostess you, you then hang out with table, round up girls for them if they ask, etc. Make sure they stay happy cause bottle service is expensive $250+ a bottle a club my fiance used to hostess for they charged $500 for grey goose and $350 for jack daniels on busy holidays or weekends it was a 2 bottle min.
Cocktail waitresses serve drinks and take orders. There is a huge difference, bottle hostess can do very well, but also have to put up with alot, some of the customers are rich guys in there 40′s whom think cause they money can have you, some request very lewd things or ask you to help them find/bribe ladies to hang out at there table cause they have bottle service.
Try going to a high-end nightclub and observe what a bottle host or hostess does. This should give you a better idea of what your getting into. But the job is very different from cocktailing and it sounds to me like you are applying at high end clubs/lounges but dont generally patronize such places.
